Long before we had slow cookers, my Mother would make a Sunday Roast. She would have it in the oven before we went to church and when we came home it would be ready to eat. I began using that same recipe when the slow cooker's became popular, and am still making it today. This is an old fashioned recipe fitted for a modern appliance, and one that continues to be one of our favorites!

Dust the roast with flour, salt and pepper,
 then sear in a very hot skillet.

Place the seared roast into the slow cooker.

Place all the vegetables around and on top of the roast.
Add the beef broth and the seasons.
Place the lid on the slow cooker and 
cook on low for 6 to 8 hours or on high for 4 to 5 hours.

Carefully remove all the vegetables and roast to a serving platter
leaving the Au Jus in the slow cooker.

The Au Jus can  be served on the side or 
can be used to make a gravy to serve on the side.

few seasons and thicken added to the Au Jus.

Slow Cooker Old Fashioned Pot Roast

A delicious old fashioned recipe for a modern appliance. A favorite recipe through the years.

Ingredients

  • 21/2 to 3 pound Chuck Roast
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 teaspoons fresh or dried thyme
  • 2 teaspoons fresh or dried parsley
  • 1 packet, beefy onion instant soup
  • 1 cup water
  • 2 garlic pods minced
  • A very light dusting of your choice of flour or corn starch
  • 2 Tablespoons Olive Oil
  • 4 medium size potatoes, quartered
  • 2 medium size onions, quartered
  • 4 celery stalks, chopped large
  • 5 carrots, large chop
  • 2 cups Beef Broth homemade or canned
  • The Gravy
  • 2 cups Au Jus from the roast
  • 1/3 cup all-purpose flour
  • 2 cups whole milk
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1 teaspoon dried thyme leaves

Instructions

  1. Mix all the seasoning together into a rub. Rub the roast all over, then lightly dust the roast with the flour or corn starch of your choice.
  2. Heat the olive oil in a skillet and sear the roast.
  3. Place the seared roast into the slow cooker.
  4. Mix the instant soup with 1 cup of water and set aside.
  5. Layer the vegetables around the roast starting with the potatoes, onions, celery and the carrots in the center. Pour the beef broth and the mixed instant soup over the roast and cover.
  6. Cook in the Slow Cooker for 6 1/2 hours on low or 4 1/2 hours on high.
  7. The Gravy
  8. In a mixing jar, pour the flour, salt, pepper, thyme leaves and milk. Place the lid on the jar and shake until the flour is dissolved.
  9. Heat the Au Jus in a sauce pan then add the milk and flour mixture into the hot Au Jus and stir.
  10. Stir the gravy mixture until it is thick and creamy, if to thick, thin with more milk.

Any left over for us means a great roast beef hash the next day!
And sometimes sliced 
roast beef sandwiches served on toast with a drizzle of
 that delicious gravy on top. 
Sometimes it just gets better everyday!
