Fruit and Kale Salad With Lemon Vinaigrette
I love walking out to my winter or summer garden and gathering some fresh kale for a nice salad. In this recipe I added some apples, pears and red onions, then topped it with a delicious lemon vinaigrette and last we sprinkled it with toasted almonds. I really enjoy a flavorful salad with all these very fresh ingredients. This is a great garden to table recipe!

How To Make Fruit and Kale Salad
With Lemon Vinaigrette
We are starting this recipe with
chopped apples, pears, dried cranberries, and red onions.
A short trip to the garden to gather some fresh kale.Remove the ribs, wash and chop the kale.
Massage the kale with lemon juice and salt.
Add the fruit, onions, and Lemon Vinaigrette
to the kale and mix well.

Fruit and Kale Salad With Lemon Vinaigrette
This salad is a great combination of fresh fruit and garden vegetables. Topped with a delicious Lemon Vinaigrette. A garden to table salad!
Ingredients
- 1 Gala Apple, chopped
- 1 Pear, chopped
- 3/4 cup red onion, chopped
- 1-1/2 cups dried cranberries
- 6 cups kale, ribs removed, chopped small
- 1 teaspoon salt
- 1 teaspoon lemon juice
- Dressing
- 1/4 cup olive oil
- 2 tablespoons fresh lemon juice
- zest of 1 lemon
- 2 teaspoons Dijon Mustard
- 1 clove garlic, minced
- 3 tablespoons honey
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 cup slivered raw almonds
Instructions
For The Salad
- In a large mixing bowl, mix the chopped, apples, pears, onions, and dried cranberries.
- Wash and clean the kale, remove the ribs and chop in bite size pieces.
- Sprinkle the kale with 1 teaspoon salt and sprinkle with 1 teaspoon lemon juice, then massage the kale until it is relaxed.
- Toss the kale with the fruit and onions.
- In a mixing jar, pour in the olive oil, lemon juice, lemon zest, Dijon Mustard, garlic, honey, salt and pepper. Place a lid on the jar and shake hard until the vinaigrette is completely blended. It will be creamy looking.
- Toss the slivered almonds in a hot skillet until they are roasted.
- Pour the amount that you choose of the lemon vinaigrette over the salad and toss well.
- Garnish with the roasted slivered almonds and serve the remainder of the vinaigrette on the side.
Garnish with toasted slivered Almonds.

I avoided kale for a long time but once I tried it, it can be quite delicious. This sounds like a great way to enjoy it. I like the idea of adding fruit.
