My Red Velvet Cake With Raspberry Filling & Butter Cream Frosting, is a very special cake for a very special occasion. It can be for a romantic dinner for two or more, maybe it could be for a special anniversary, or maybe it is just because I love you and want to make you a very special cake. This cake is so moist with a Raspberry filling and some delicious Raspberry Butter Cream Frosting, plus I have garnished it with fresh Raspberries. My husband just loved this cake when I served it to him for a very romantic dinner for two.

How To Make Red Velvet Cake With
Raspberry Filling & Butter Cream Frosting
We will start with two 8 inch cakes.
After the cakes are cooled completely,
then we apply the raspberry filling.
Place the second layer on top of the filling.
The Butter Cream Frosting is made
with fresh raspberries.
Just beat the fresh berries into the
wonderful Butter Cream.
Now it is time to frost the cake.
Garnish with fresh raspberries.

Red Velvet Cake With Raspberry Filling & Buttercream Frosting
A very moist cake, with fresh raspberry buttercream frosting. A very special cake for a special occasion.
Ingredients
- For The Cake
- 1 (15.25) Red Velvet Cake Mix (I used Duncan Hines)
- 3 eggs
- 1/2 cup oil
- 1 cup water
- Bakers Spray For the pans
- For The Filling
- 1/2 cup Raspberry Preserves
- For The Frosting
- 1 (8-ounce) block cream cheese, softened
- 1 cup butter, softened
- 1 teaspoon Raspberry extract
- 4 cups confectioners sugar
- pinch salt
- 2/3 cup fresh Raspberries
- For Garnish
- 1 cup fresh Raspberries
Instructions
- The Cake
- Prepare the cake mix according to the box directions for a 8 inch cake. After removal from the oven, let the cake completely cool before placing the filling on top of the bottom layer.
- The Filling
- Place the filling on the bottom layer of the cake.
- Place the top layer on top of the filling.
- The Frosting
- In a medium bowl, using a hand mixer, place the soften cream cheese and butter, then cream the two until very smooth.
- Add the extract and the fresh raspberries into the creamed cheese and butter mix well.
- Add the confectioners sugar and salt then mix well.
- If you need your frosting thicker, add more sugar.
- Frost the cooled cake.
- Garnish with fresh raspberries.
