Baked Irish Chicken
This is a great meal in a pot, I know that my Irish Grandma would have loved this recipe, and most likely made a Baked Irish Chicken very much like this recipe. The chicken has a special rub and would melt in your mouth all by itself, however we are adding some wonderful Irish vegetables that will complete this dish. Our family loves this recipe and keep coming back for seconds.

Baked Irish Chicken
The first thing I did was fry the bacon and render the bacon fat into that wonderful bacon grease. Remove the bacon to a holding platter.
The bacon grease will give the chicken
and vegetables special flavor.
I am using a whole chicken for this recipe, and I cut up a whole chicken. I know that many of you don't like to or maybe don't know how to cut up a whole chicken.
If you can learn how to cut up your whole chicken,
it will save you a lot of money.
Next we want to brown the chicken in the bacon grease. Brown all the chicken pieces and set them aside on a holding platter.
Now we are ready to work on the vegetables,
starting with the sliced potatoes.
We will brown the potatoes in the same pot as the chicken in all those wonderful seasons that are left behind
from the bacon and chicken.
Add the cabbage to the pot with the potatoes and begin to wilt the cabbage. Stir in the water. By now the smell of
all these seasons and vegetables is just amazing!
Next we will layer the chopped crisp bacon on top of the cabbage.Our last vegetable layer is the sliced onions.

around the edge of the pot.
Place the lid on the pot and into the oven.

Baked Irish Chicken
A seasoned rubbed whole chicken with layers of Irish vegetables that is a delicious meal in the pot.
Ingredients
- 7 to 8 slices bacon, cooked crisp, chopped
- Rub
- 1/2 teaspoon onion powder
- 2 teaspoons thyme
- 3/4 teaspoons garlic powder
- 1 teaspoon sweet paprika
- 1 teaspoon salt
- 1 teaspoon pepper
- 1 (4 to 5 pound) frying chicken, cut up
- 4 (medium) white Irish potatoes, peeled and sliced
- 1 (small) head cabbage, chopped
- 2 (medium) yellow onions, sliced
- 1/2 cup water
- 1 cup apple juice
Instructions
- In a very heavy Dutch oven cook the bacon until it is crisp and the fat has been rendered. Remove the bacon to a holding platter and set aside, leaving the bacon grease in the bottom of the cooking pot.
- Mix the onion powder, thyme, garlic powder, sweet paprika, salt and pepper in a small mixing dish. Then cover the cut up chicken on all sides with the rub.
- Place the chicken into the hot bacon grease and brown the chicken, then place it on a holding platter and set aside.
- Brown the potatoes in the same bacon and chicken grease.
- Add the cabbage to the pot and stir with the potatoes. Add the water and the cabbage will begin to wilt.
- Chop the crisp bacon and add it all to the top of the cabbage.
- Layer the sliced onions on top of the bacon and cabbage.
- Place the browned chicken on top of the bacon and cabbage.
- Pour the apple juice around the edge of the pot.
- Place the lid on the pot and bake in a 375 degree oven for 55 to 60 minutes.
- Remove from the oven and serve the chicken and vegetables. The left overs are amazing!

Irish Soda Bread, to complete our meal.
