Grandma's Irish Potato Soup
My Irish Grandma made a very simple potato soup and this recipe is just like the one she made. It is a very simple recipe to follow and the combination of fresh garden vegetables, butter and farm fresh milk, gives us a very comforting soup. Our family loves this simple soup and I often think of my Grandmother in her Irish cottage kitchen as she prepared her potato soup for the family. This is truly one of the soups that will stick to your ribs and keep you warm and cozy.

Grandma's Irish Potato Soup
This Irish soup is a simple but delicious blend of vegetables, and seasons. A family recipe handed down through the generations.
Ingredients
- 4 tablespoons butter
- 2 teaspoons salt
- 1 teaspoon pepper
- 1 teaspoon thyme
- 1 onion, chopped
- 4 stalks celery, chopped
- 5 garlic cloves, minced
- 5 medium size potatoes, chopped
- 4 cups chicken broth
- 1/3 cup flour
- 1-1/2 cup half and half
- For Garnish
- Fresh Green Onions, chopped, Bacon Bits, Cheddar Cheese (optional)
Instructions
- In a very heavy soup or stew pot, heat the butter and sauté the onions and celery, until the onions are clear and the celery is tender. Stir in the minced garlic.
- Stir in the potatoes, then season with salt, pepper and thyme. Cook the potatoes until they begin to brown.
- Pour in the broth and cook the vegetables until the potatoes are tender about 20 minutes. After the potatoes are tender, with a potato masher, mash the potatoes until they are in very tiny pieces.
- In a small mixing jar, mix the flour and milk until the flour is dissolved, then pour the milk mixture into the soup. Stir very well and it will thicken just a bit.
- Continue to cook the soup on low for about 20 minutes. Adjust the seasons to your taste.
- Optional Garnish: Bacon Bits, Fresh Onion, chopped and shredded cheddar cheese.
I like to garnish the soup with bacon bits, chopped fresh green onion, and shredded cheddar cheese. It is really delicious just plain with a dollop of sour cream.
