Irish Mashed Potatoes -Colcannon
This Irish Mashed Potato dish or the Irish call it Colcannon, is my most favorite of mashed potatoes. This is a very classic recipe and is rich, creamy, and buttery. We have added some bacon and fresh green onions, to put it over the top! The flavor of this recipe is fabulous and I could really make a meal from this one dish. Our family will line up for a serving or two of these special potatoes.

How To Make Irish Mashed Potatoes - Colcannon
I am starting the recipe with a trip to the winter garden and found the perfect small cabbage head for this recipe.
Chop the cabbage in strips, fresh cabbage smells so good.
Drop the cabbage strips into a boiling pot of salty water.
While the cabbage is cooking, cook the bacon until crisp. Remove the bacon to a holding platter and
when it is cooled, then chop it.
Remove the cooked cabbage to a holding platter.
Place the potatoes into the cabbage water,
and add more water if necessary.
Boil until tender.
Drain the potatoes, place them back into the cooking pot.
With an old fashioned potato masher, mash the potatoes.
Stir in the half and half plus the melted butter.
Add the fresh green onions and stir well.
Stir in the chopped bacon.
The Recipe
Just before serving we drizzle the remainder of
the melted butter and garnish with chopped bacon
and chopped fresh green onions.
