We will be whisking together some olive oil, 
Dijon and some fresh and powdered spices.

After cubing some skinless and boneless chicken breast, 
we will cover the chicken with the marinade and set aside.

Heat the olive oil in a heavy oven prove skillet
 and brown the chicken. Remove the chicken from the skillet and place it on a holding platter.

Place the orzo in the hot skillet with the chicken oil and seasons.
 Brown the orzo and then add the broth. After the Orzo is cooking 
stir in the fresh spinach and cook until it is wilted.

Place the browned chicken on top of the Orzo and spinach.

Lemon Skillet Chicken With Orzo and Spinach

The chicken has a great marinade that gives the entire dish a very special flavor. The Orzo and the Spinach complete the dish making it a true one dish dinner.

Ingredients

  • 2 pounds, skinless, boneless chicken breast, cubed
  • 4 tablespoons extra virgin olive oil-divided
  • 3 tablespoons Dijon mustard
  • 3 garlic cloves, minced
  • 2 tablespoons dried onion flakes
  • 3 tablespoons fresh rosemary, chopped fine
  • 1 teaspoon dried thyme
  • 1 teaspoon paprika
  • 2 teaspoons salt
  • 1 teaspoon pepper
  • Juice of 2 lemons-divided
  • 3 tablespoons butter
  • 2 cups orzo pasta
  • 3 cups chicken broth
  • 2 cups fresh spinach
  • 1 lemon for slicing
  • Feta Cheese Crumbled, and fresh herbs for garnish

Instructions

  1. Whisk together 3 tablespoons olive oil, Dijon mustard, garlic, dried onion flakes, rosemary, thyme, paprika, salt and pepper, juice of 1 lemon, in a large mixing bowl. Add the cubed chicken, covering each cube well, and refrigerate for 20 minutes.
  2. Heat 1 tablespoon olive oil in a heavy oven proof skillet, place the chicken into the hot oil and brown the chicken, lower the heat and cook for about 10 minutes, stirring to make sure it does not stick. Remove the chicken to a holding platter.
  3. Place the butter into the skillet where the chicken was cooked, do not clean, leave all the chicken goodness in the skillet. Pour the orzo into the skillet and stir until browned. Add the chicken broth and then add the fresh spinach, cook for 10 minutes while stirring.
  4. Place the cooked chicken on top of the cooked orzo and spinach. Drizzle the juice of 1 lemon over the chicken. Place lemon slices on top of the chicken. Place uncovered into a 400 degree oven and bake for 10 minutes.
  5. Garnish with Feta Cheese, crumbled and fresh herbs
