Mix the dry ingredients, chop the 
strawberries and add the blueberries.

Toss the berries in a little flour.

Mix the dry ingredients with the wet ingredients.

Fold the berries into the batter.

Using a large scoop fill fill the muffin papers in the muffin tin.

Strawberry & Blueberry Patriot Muffins

Strawberry & Blueberry Patriot Muffins

Strawberry & Blueberry Patriot Muffins recipe is quick and easy delicious muffin. Great for brunch or a special treat!

Ingredients

  • 2 1/4 cups all-purpose flour, divided
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 1/2 cup butter, room temperature
  • 1 cup granulated sugar
  • 2 eggs,
  • 1 1/2 teaspoons vanilla extract
  • 1/2 cup plain Greek Yogurt
  • 1-1/2 cups strawberries, chopped
  • 1 cup blueberries
  • Garnish, decorator sugar

Instructions

  1. In a medium mixing bowl, whisk 2 cups of the flour, baking powder and salt together, then set aside.
  2. Add the chopped strawberries and blueberries to a medium bowl and toss them with 1/4 cup of flour, then set aside.
  3. In a mixer bowl, cream the butter and sugar together until light and fluffy. With the mixer running add one egg at a time and then add the vanilla. Mix until just combined.
  4. Scrap the sides down and add the yogurt, mixing until combined. Turn the mixer to low and slowly add the dry ingredients a little at a time.
  5. Remove the bowl from the mixer and fold in the strawberries and blueberries.
  6. Using a scoop, fill the muffin papers that have been set in the muffin tin. Garnish with a decorator colored sugar, (if desired).
  7. Bake at 375 degrees for 24 minutes or until the muffins are golden brown on top.

  5. I took these to a Fourth of July breakfast party in my neighborhood and they were a big hit! They are so cute and taste as good as they look! I've got strawberries and blueberries left and I'm going to make another batch to freeze.
