Roasted Heirloom Tomato Bruschetta with Feta is one of our favorite toppings for a great Bruschetta. The heirloom cherry tomatoes are marinated in a mixture of oil, vinegar and fresh herbs, then roasted in the oven. We add the Feta Cheese and spoon it on the top of a toasted French Bread Slice. This is a very special appetizer and one that is always a big hit with our group here at the cottage. One of the favorites from the garden to the table recipes!

Starting this recipe with a pan of beautiful 
heirloom cherry tomatoes from our garden.

Pour the marinade over the tomatoes and let them set for a while.

While the Tomatoes are set aside, 
I prepare the Bruschetta toast. I like to use
thinly sliced buttered French bread.

Roast the tomatoes in a hot oven. 
Remove from oven and add Feta and more fresh herbs.

Roasted Heirloom Tomato Bruschetta With Feta

Roasted Heirloom Tomato Bruschetta With Feta, a delicious garden to table appetizer!

Ingredients

  • 3 cups heirloom cherry tomatoes
  • 1/3 cup olive oil
  • 1/3 cup rice vinegar
  • 1/4 cup honey
  • 1 tablespoon lemon juice
  • 3 teaspoons minced garlic
  • 1/4 cup red onion, chopped fine
  • 2 tablespoons fresh lemon zest
  • 3 tablespoons fresh oregano leaves, chopped
  • 2 tablespoons fresh thyme, chopped
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • pinch red pepper flakes
  • 3/4 cup Feta Cheese, large crumbles
  • 12 slices French Bread, sliced thin
  • 1/4 teaspoon soft butter, for each slice of bread
  • 1 cup fresh basil for garnish

Instructions

  1. Wash and dry the cherry tomatoes, then place them into a 8X11 baking dish.
  2. Mix the olive oil, vinegar, honey, garlic, onions, lemon juice, oregano leaves, thyme leaves, salt, pepper, chili flakes and lemon zest in a mixing pitcher. Whisk in the mixing pitcher until completely blended.
  3. Pour the vinegar mixture over the tomatoes and set aside.
  4. Butter the sliced French Bread and place it on a sheet pan. Bake in a 425 degree oven for 8 minutes or until the bread turns golden brown on top. Remove from the oven and set aside.
  5. Place the marinated tomatoes in the oven and roast uncovered at 450 degrees for 20 minutes.
  6. Remove the tomatoes and stir in the Feta until it begins to melt.
  7. Spread the tomato mixture on top of the toasted bread for a delicious bruschetta!
  8. Garnish with fresh basil.
