Strawberry & Blueberry Ice Box Pie
We have so many berries on our vines and what better place to go with them than a delicious ice box pie. This is such an easy recipe and one that I make over and over all through the summer. The flavor of this pie is a delicious blend of strawberries and blueberries, a cool and refreshing treat. There is just one problem with this pie, it never last very long here at the cottage, so I have learned to just make two, enjoy a slice today and tomorrow!

Strawberry & Blueberry Ice Box Pie
We are making a homemade pie crust to blind bake.
Next we will begin to make the filling for the pie.
Stir the berries into the filling gel, making sure
that every berry is covered well.
If you want to use a frozen pie crust that is just fine. Pour the filling mix into the pie crust after it has been baked.
Refrigerate the pie for 4 hours before serving.

Strawberry & Blueberry Ice Box Pie
This is a easy recipe and one that I make over and over all through the summer. The flavor of this pie is a delicious blend of strawberries and blueberries, a cool and refreshing treat.
Ingredients
- 1 9 inch baked pie crust, and cooled
- 2 3/4 cups strawberries, sliced
- 1 1/4 cups blueberries
- 1 cup sugar
- 1 1/2 cup water
- 1/2 cup cornstarch
- 1 (3 ounce) package strawberry Jello
- Whipped topping for garnish
Instructions
- Slice the strawberries and place them into a mixing bowl, add the blueberries and toss together. Set aside.
- In a large sauce pan add the sugar and water, then heat of medium heat. Slowly whisk in the cornstarch to incorporate well, making sure there are no lumps. Heat this mixture stirring constantly for about 5 minutes, until it begins to thicken.
- Remove from heat and whisk in the strawberry Jello, whisk until completely dissolved. Set aside to cool to room temperature.
- Stir in the strawberries & blueberries to the Jello mixture, then pour the mixture into the baked and cooled pie crust.
- Place into the refrigerator for 4 hours.
- When ready to serve garnish with whipped topping.
Right before serving, garnish with whipped topping.
