Easy Grilled Mediterranean Pork Kabobs
I love Mediterranean cuisine, it is always very fresh and lite with flavors that we really enjoy here at the cottage. This is a recipe that takes very little time and ingredients, it all goes into a zip lock bag and stays there overnight. Next day we thread it on the skewers and on to the grill. A few minutes on the grill and enjoy the delicious platter full of goodness!

How To Make
Easy Grilled Mediterranean Pork Kabobs
Mixing vinegar, oil, onion, garlic, and fresh herbs for a marinate.
Place the cubed pork into a zip lock bag and
pour the marinate over the pork.
Mix making sure all the pork is covered on all sides. Then zip the bag making sure the air is out of the bag. Place the bag in the refrigerator overnight.
Place the kabobs on the grill.
Place on a hot grill and grill each side 3 to 4 minutes or until the internal temperature has reached 145 degrees.

Easy Grilled Mediterranean Pork Kabobs
Juicy, tender and full of fresh flavor, a very easy recipe. Marinate overnight and a few minutes on the grill, just delicious!
Ingredients
- 2 pounds pork tenderloin, cut into 1 inch cubes
- 3/4 cups red wine vinegar
- 1/2 cup vegetable oil
- 1 red onion, chopped very small
- 3 garlic cloves, minced
- 2 tablespoons fresh parsley, additional parsley for garnish
- 1 tablespoon lemon juice
- 1 tablespoon lemon zest
- pinch red pepper flakes
- salt to taste
Instructions
- Cut the pork loin into 1 inch cubes and place into a zip lock bag.
- For the marinate: In a mixing pitcher whisk together, the vinegar, oil, onion, garlic, parsley, pepper flakes, lemon juice and lemon zest.
- Pour the marinate over the pork in the zip lock bag. Mix together really well until the pork is completely covered. Zip the bag, making sure all the air is out of the bag. Place the bag in the refrigerator overnight.
- Thread onto skewers, place them on a hot grill. Grill about 4 minutes on each side or until they reach an internal temperature of 145 degrees.
- Salt to taste and garnish with fresh parsley.
These kabobs are so juicy, tender and full of flavor!
