I was recently invited to speak with a group of young homemakers about food preparation on a budget. They were concerned that their food dollars were not going as far as they once were and like so many of us they were looking for some recipes that would give them a nice dish for the family without too many dollars. Our Beefy Onion Casserole is one of the recipes that I passed along to them, it is a very tasty and filling casserole that will be great for a family dinner and depending on the size of your family you could even have some left overs. I have made  this  casserole many times through the years and even taken it to pot luck dinners, it is budget friendly and always a hit!

How To Make Beefy Onion Casserole

We will start the recipe with browning and seasoning
 the ground chuck.

Combine the soup and sour cream dip together, then add it to the beef.

Add the cooked and drained egg noodles to 
the soup and beef mixture.

Prepare a 9X13 baking dish and pour the
 mixed casserole into the baking dish.

Cover the top of the casserole with fried onion rings.

Beefy Onion Casserole

Beefy Onion Casserole

A family and budget friendly casserole. Beef, noodles, rich sauce and topped with onion rings.

Ingredients

  • 1 pound ground chuck
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • dash Tabasco
  • 2 cans (10.75 ounces each) cream of mushroom soup
  • 1 container ( 16 ounce) French Onion Dip
  • 1 (10 ounce) bag egg noodles, cooked and drained
  • 2 cups fried onion rings

Instructions

  1. In a large skillet brown the ground chuck. Add salt, pepper, dash of Tabasco and mix well with the ground chuck, then set aside.
  2. In a mixing pitcher mix together the soup and onion dip. Add the soup mixture to the ground chuck and mix well.
  3. Add the cooked and drained egg noodles to the beef and soup mixture stirring well.
  4. Spray a 9 X 13 baking dish with a cooking spray and pour the casserole mixture into the baking dish. Top the casserole with the fried onion rings.
  5. Bake for 25 to 30 minutes.
  6. Remove from oven to a cooling rack and let sit for 10 minutes before serving.
