Mississippi Vegetable Beef Soup
Our delicious soup recipe is a result of left over Mississippi Pot Roast. Some of the best family kitchen recipes come from the left overs or an ingredient exchange of some kind. We have put together a combination of fresh vegetables, some of the left over beef with some great broth to make this outstanding soup. I love soup in any season, but when we get to early fall and winter I love my stews and soups. This recipe will definitely be on my favorites list.

How To Make Mississippi Vegetable Beef Soup
Starting With Some Left Over
I used about 3 cups of the left over roast in the recipe and some of the broth. This soup has amazing flavor!
In my large soup pot, I am melting about
4 tablespoons butter.
Prepare and slice about 3 cups of fresh carrots,
I got these right out of my garden. Sauté the
sliced carrots in the butter just until tender.
Add 2 cups of chopped onion to the carrots
and sauté until clear.
Next I am adding 3 cups of Zucchini chopped
and season with salt and pepper.
I continued to sauté the vegetables until the Zucchini is just tender.
Place the left over beef, tomatoes and some of the broth from the roast into the soup pot with the sautéed vegetables and mix well.
Add 4 cups chicken broth plus one cup of water and stir well.
Add 4 cups of chopped fresh cabbage,
salt and pepper then stir well.
Stir the soup well and place the lid on the soup pot. Cook on medium heat until it comes to a boil,
then simmer for 30 minutes or until serving.

I found this recipe when asked what our State Soup should be. I live on the Mississippi Gulf Coast in the land of Louisiana gumbo eaters, and saw Mississippi doesn’t have one. I nominated your recipe,before I even made it. Now that I have, I stand by my nomination. Thanks!
