Brussels Sprouts With Cranberry Glaze & Orzo
I love going to the garden and collecting the young Brussels Sprouts when they are so tender. I wanted to make a dish that could be a great side and this one is. The combination of the Brussels Sprouts in the cranberry glaze, some fresh herbs and spices add the orzo with a garnish of crisp bacon, it is just delicious. I have served this one to guest who ask for a go box, its a winner!

Brussels Sprouts With Cranberry Glaze & Orzo
Fry the bacon in a large skillet, leaving
the bacon grease in the skillet.
Sauté the seasoned brussels sprouts in the bacon grease.
Add the brussels sprouts to the cooked orzo.

Brussels Sprouts With Cranberry Glaze & Orzo
A great combination of fresh Brussels Sprouts with herbs, spices and a cranberry glaze mixed with orzo. Delicious side dish.
Ingredients
- 2 cups orzo
- 2 cups chicken broth
- 3 slices bacon, cut into bite size pieces
- 2 pounds brussels sprouts, cleaned
- 1 teaspoon salt
- 1 teaspoon black pepper
- 2 teaspoon dried thyme, divided
- 2 cups whole cranberry sauce
- 2 tablespoons honey
Instructions
- In a large stew pot, bring 2 cups of chicken broth to boil and add the orzo. Adjust the heat to boil the orzo for about 12 minutes until tender. Remove from the heat and place the lid on the pot and set aside.
- In a large heavy skillet, cook the bacon pieces until crisp, remove the cooked bacon to a holding plate lined with a paper towel, leaving the bacon grease in the skillet.
- After the brussels sprouts have been trimmed and cleaned, add the salt, pepper and 1 teaspoon of dried thyme, then toss well. Place the brussels sprouts into the hot bacon grease and sauté until browned well.
- In a small mixing bowl, mix the cranberry sauce with 1 teaspoon dried thyme.
- Stir the cranberry sauce over the brussels sprouts and continue to cook on low heat. Drizzle the honey over the glazed brussels sprouts and mix well, continue to cook until the glaze is bubbling.
- Mix the glazed brussels sprouts with the orzo and garnish with the crisp bacon pieces.
- Serve hot.
Notes
add 1 cut of toasted pine nuts or 1 cup chopped toasted walnuts.
