Fried Pork Cutlets With Thyme Gravy
When I was developing this recipe, it brought me back a bit to the days when my Mother would make a similar recipe for my Dad. This is a very simple recipe that is loaded with flavor. I got my cutlets on sale which gave me even greater incentive to develop this recipe, and I am so glad I did. The Thyme Gravy is just a bonus, but how could we have fried cutlets without some gravy. We so enjoyed this dish and will be making the recipe over and over in the future.

How To Make Fried Pork Cutlets
With Thyme Gravy
Mix flour, baking powder, salt, pepper, garlic powder, onion powder, and Cayenne Pepper, together and spread out on a plate. Whisk together 2 eggs with 1/2 cup milk and 1/2 cup water, with a dash of Tabasco.
Salt and pepper the cutlets and dip them in the flour, then dip them into the egg mixture, then back into the flour,
set aside on a plate.
Pour cooking oil into the large heavy skillet, pour enough oil to go up the side of your skillet for about 1/4 inch. Heat the oil to 350 degrees. Very carefully lower the breaded cutlets in the hot oil. Cook the cutlets about 4 minutes on each side with the internal temperature coming to 160 degrees.
I leave about 1/2 cup of the oil with all the crumbles in the skillet after the cutlets are removed to a holding plate. In a shaker jar, mix together flour, salt, pepper, dried thyme and milk. Shake in the jar until the mixture is smooth, then pour into the hot oil in the skillet. The gravy will thicken pretty quick, stir constantly and pour more milk or water if you want it to be thinner. Garnish with fresh thyme leaves.
