I don't ever remember baking a ham without having some left overs. I like to take those left overs and freeze them in individual bags of 3 cups each and then when I want some ham for a casserole, it is ready to go. Sometimes those left overs never make it to the freezer, they just go right into this delicious casserole. This is a delicious combination of flavor and texture and will have your family coming back for seconds. A great casserole for a family dinner or a potluck supper.

How To Make Ham and Noodle Vegetable Casserole
We are going to start this recipe by placing the 
frozen vegetables in the bottom of the colander.

Drain the hot noodles right on top of the frozen vegetables.
This allow the frozen vegetables to thaw just a bit
 and the pasta water will flavor them.

Mix the soup, soften cream cheese and milk
 together in a mixing pitcher.

Place the noodles and vegetables into a large mixing bowl.

Add the chopped ham on top of the noodles and vegetables.

Pour the soup mixture over the casserole mix and stir well. Pour the casserole into 
a prepared 9 X 13 baking dish.

Bake in the oven at 350 degrees for 30 minutes, remove and sprinkle the cheese on top. Place it back in the oven 
and cook for 15 more minutes until the cheese has melted.

Ham and Noodle Vegetable Casserole

A comforting and delicious casserole to make for family and friends without spending all day in the kitchen.

Ingredients

  • 1 (12 ounce) package egg noodles, cooked according to package directions
  • 1 (12 ounce) package frozen peas and carrot's
  • 3 cups baked ham, chopped
  • 1 ( 10 3/4 ounce can cream of mushroom soup
  • 1 (8 ounce) container chive and onion-flavored cream cheese, softened
  • 3/4 cup milk
  • 1 teaspoon garlic salt
  • 1 teaspoon black pepper
  • 1/8 teaspoon cayenne pepper
  • 1 cup sharp cheddar cheese, shredded
  • cooking spray for baking dish

Instructions

  1. Place the frozen peas and carrot's into the bottom of a colander.
  2. Cook the egg noodles according to package directions, then drain into the colander with the vegetable's at the bottom.
  3. In a mixing pitcher, whisk together the soup, soften cream cheese, milk, garlic salt, black pepper and cayenne pepper.
  4. Pour the drained noodles and thawed frozen peas and carrots into a large mixing bowl. Add the ham on top, then pour the soup mixture on top and mix well.
  5. Spray a 9 X 13 baking dish with a cooking oil. Pour the casserole mix into the baking dish.
  6. Bake at 350 degrees for 30 minutes. Remove from the oven and sprinkle the cheese on top of the casserole. Return the casserole to the oven and bake for 15 minutes until the cheese has melted.
  7. Remove to a cooling rack and serve hot.
