We are expecting some special guest at the cottage, so I reached out to our guest and ask what favorite cottage recipe they would like for me to prepare for them.  Our guest requested the delicious Chicken Alfredo Penne Bake, and it is a great recipe to make. This is a very flavorful creamy pasta bake that will really stick to your ribs. We will serve it with a crisp green salad and some hot crusty bread.

I like to place the frozen broccoli in the bottom of the calendar.

Drain the Penne right into the colander and on top of the 
frozen broccoli. The hot pasta water 
will thaw the broccoli and begin to cook it.

Mix the drained pasta with the thawed broccoli.

After the chopped chicken has been seasoned,
 brown the chicken in some hot olive oil.

Next mix some alfredo sauce, milk and seasons together, 
then pour it over the pasta and broccoli.

Mix the pasta with the creamy sauce and the broccoli.

Next we are adding the browned cooked chopped chicken to the pasta and broccoli mixture.

Mix the pasta, broccoli and chicken with 
the sauce until completely combined.

Pour the mixture into a 9 X 13 baking dish.

Sprinkle the shredded Mozzarella Cheese over the top of the dish.

Bake in the oven until the cheese is melted and the sauce is bubbly.

Chicken Alfredo Penne Bake

A favorite recipe of our guest here at the cottage. Creamy & flavorful Chicken, Alfredo Penne Bake.

Ingredients

  • 1 (12 ounce) frozen broccoli cuts
  • 4 cups dry penne pasta
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 2 chicken breast, chopped in 2 inch cubes
  • 2 (16 ounce) Alfredo Pasta Sauce
  • 1 cup milk
  • 1 tablespoon dried Italian seasoning
  • 2 cups shredded Mozzarella Cheese

Instructions

  1. Place the frozen broccoli into a colander
  2. Cook the pasta according to directions and pour the hot pasta water over the frozen broccoli in the colander, then set aside.
  3. Chop the chicken breast into 2 inch cubes, then generously salt and pepper.
  4. Heat the olive oil in a heavy skillet and brown the seasoned chicken, remove from the skillet and set aside.
  5. Mix the Alfredo Sauce and the milk together, until completely blended.
  6. Pour the pasta and broccoli into a large mixing bowl. Pour the sauce over the pasta and broccoli then stir together. Add the browned chicken and the Italian seasoning, stir until mixed well.
  7. Pour the pasta mix into a 9 X 13 baking dish. Sprinkle the top of the mixture with the Shredded Mozzarella Cheese.
  8. Bake in a 350 degree oven for 25 minutes or until the cheese is melted and the sauce is bubbly.
