Cowboy Stew
My husband grew up on a ranch and he said that the cowboy stew's were always some of the best. A good Cowboy Stew will have a different combination of protein and vegetables just about every time, because the bunkhouse cook would use what was available. This is one of my husbands favorite Cowboy Stew's this one is made the same every time because it is his favorite. It is a great stew for a crowd and it freezes up to 3 months.

How To Make Cowboy Stew
We have browned some ground chuck, chopped onions, and garlic in a large stock pot. Add some peeled chopped white potatoes and cook until, potatoes begin to brown and the onions are clear.
Next stir in the sliced Kielbasa sausage, then mix well and continue to cook on medium until the sausage begins to just brown.
let cook for about 5 minutes.
Begin to add the remainder of the vegetables mixing well with the stew mixture.
Place the lid on the stew and cook on medium heat until the stew is hot. reduce the heat and let cook on low for 1 hour.
Stir the stew well and reduce the heat to simmer until ready to serve.Recipe

That looks and sounds like the perfect one pot meal for cold days! I don't have a crowd to feed most days, but when I do, I will make a pot of this with some cornbread. Yum!
