Blueberry Butter Pecan Cake With Cream Cheese Frosting
I wanted the blueberries to be the star of this cake recipe and now I believe the whole cake is the star. When I started to develop this recipe, it was going to be a different cake. I ended up taking it in an entirely different direction with the fresh blueberries that my neighbor gave me. The butter pecan crumb of the cake and the cream cheese frosting are such a delicious blend. I have garnished it with pecans, fresh blueberries and a mint chiffonade. This cake will be a hit for any occasion and is delicious!

Blueberry Butter Pecan Cake
With Cream Cheese Frosting

Gently fold the blueberries into the batter.
Pour the batter into a prepared 9X13 baking dish.
Bake and then cool on a cooling rack until completely cooled before frosting.While the cake is cooling make the frosting with the electric mixer.
This frosting is delicious and so easy to spread.
Spread the frosting on the cake.
chopped pecans. Complete the garnish before serving with a chiffonade of fresh mint.

Blueberry Butter Pecan Cake With Cream Cheese Frosting
This cake has a delicious butter pecan crumb with fresh blueberries. A creamy cream cheese frosting tops the cake.
Ingredients
Cake
- 1 (15.25 ounce) box Butter Pecan Cake Mix
- 1 cup water
- 1/2 cup vegetable oil
- 3 eggs
- 3 cups fresh blueberries
- Baking spray for the baking dish
Cream Cheese Frosting
- 1/2 cup butter, softened
- 1 (8 ounce) block cream cheese
- pinch salt
- 1 teaspoon vanilla extract
- 4 cups powdered sugar
- Garnish 3/4 cup pecans, chopped, 1 cup fresh blueberries, chiffonade of fresh mint
Instructions
Cake
- To prepare the batter for the cake, follow the directions on the cake mix box.
- After the batter is mixed, fold in the fresh blueberries.
- Spray a 9X13 baking dish with a baking spray.
- Pour the batter into the baking dish.
- Bake according to directions on the cake mix box.
- Remove the baked cake from the oven to a cooling rack. Cool completely before frosting.
Cream Cheese Frosting
- In an electric mixer bowl, cream the cream cheese and the butter together until creamy.
- Add salt and vanilla extract mix well.
- Gradually add the powered sugar until completely combined and creamy.
- Spread the frosting on the top of the cake.
- Garnish with 3/4 cup pecans, 1 cup fresh blueberries and chiffonade of mint.
- Cake is best served served chilled.
