We will start with cleaning our fresh berries.

Whisk the eggs, milk, butter, extract, and vinegar together.

Whisk in the dry ingredient's into the egg and milk mixture.

Mix together until completely blended.

Mini Blueberry Jam Muffins

Mini Blueberry Jam Muffins

The flavor of the jam and fresh berries is amazing and great as a special treat anytime of the day!

Ingredients

  • 1/2 cup butter, melted and cooled to room temperature
  • 1 cup milk
  • 2 teaspoons vanilla extract
  • 2 eggs
  • 2 teaspoons apple cider vinegar
  • 1/4 cup maple syrup
  • 2 cups all purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground ginger
  • 1/2 teaspoon salt
  • 1 cup fresh blueberries
  • 3 tablespoons blueberry jam

Instructions

  1. In a large mixing bowl, whisk together the cooled melted butter, milk, eggs, vinegar, vanilla extract and maple syrup.
  2. In a medium mixing bowl whisk together the flour, baking soda, cinnamon, ginger and salt.
  3. Whisk all the dry ingredients into the milk and egg mixture and mix until completed blended.
  4. Fold in the fresh blueberries, then swirl the jam into the batter. Be careful not to over mix.
  5. Spray a 24 mini muffin tin with cooking oil. Fill each muffin cup 2/3 of the way full.
  6. Bake at 350 degrees for 14 minutes. Remove to a cooling rack and let cool for 10 minutes before removing from the tins.
