This country corn, potato and sausage chowder could be found in my grandmothers kitchen just about anytime the corn was harvested.  It is packed with fresh corn, potatoes, onions and spicy sausage, a delicious stick to your ribs chowder that our family loves. Slow cooked with fresh herbs makes this chowder a winner every time. This chowder can be frozen for up to 3 months.

Add the chopped potatoes and onions to the slow cooker. Generously salt and pepper the potatoes and onions.

Toss the corn and sausage with the potatoes and onions.

Toss the flour with all the potatoes, onions, corn and sausage.

Stir in the broth with all the ingredients. Place a spray of fresh thyme on top of the mixture. Place the lid on the cooker and cook on 3 to 4 hours on high or 5 to 6 hours on low.

In a small skillet fry the remainder of the chopped sausage.

Country Corn, Potatoes and Sausage Chowder

A delicious stick to your ribs chowder. Slow cooked with fresh herbs makes this chowder a winner every time.

Ingredients

  • 6 cups new potatoes, chopped in quarters
  • 2 medium onions, chopped
  • 2 teaspoons salt
  • 2 teaspoons pepper
  • 2 cups fresh or frozen corn
  • 3 cloves garlic, minced
  • 12 ounces Kielbasa, chopped fine
  • 1/4 cup all-purpose flour
  • 4 cups chicken broth
  • 1 medium spray of fresh thyme
  • 1 cup half and half

Instructions

  1. Place the chopped new potatoes, onions, garlic into a 5 quart slow cooker. Salt and pepper the vegetables and toss together.
  2. Toss the corn, and 6 ounces of the sausage with the vegetables. Sprinkle the flour over the mix and toss well, making sure all the ingredients are covered.
  3. Stir in the chicken broth and place the thyme on top. Place the lid on the cooker and cook for 3 to 4 hours on high or 5 to 6 hours on low.
  4. In a small skillet, cook the remainder of the sausage until brown and crisp, then set aside.
  5. Remove the lid from the cooker and stir in the half and half.
  6. To serve in individual servings garnish with the crisp sausage bit's and fresh thyme.

Notes

This chowder can be frozen for up to 3 months.
