Haystack Chicken Casserole
This delicious casserole comes together in a short time and gives you lots of flavor. I am using one of my frozen bags of cooked chicken that I keep in the freezer. This recipe has very simple ingredients and is a great combination to give us a win with this casserole. We have served this to family and took it to a covered dish supper recently, everyone loves it!

This Is How To Make Haystack Chicken Casserole
I keep cooked chicken in freezer bags in the freezer to use in soups, salads and casseroles. I am using a roasted chicken bag in this casserole. You could use a rotisserie chicken if you like.Recipe

Haystack Chicken Casserole
A delicious combination of chicken, rice, fruit and vegetables. Seasoned to perfection with a crunchy top. A great family casserole.
Ingredients
- 3 cups cooked chicken, chopped
- 1 (10.5 ounce) can Cream of Chicken Soup
- 1 cup Sour Cream
- 3 cups cooked rice
- 1 cup slivered toasted almonds
- 1 cup celery, chopped
- 1 cup black olives, chopped
- 1 (15.25 ounce) can pineapple tidbits with juice
- 3 cups Chow Mein Noodles
- salt and pepper to taste
Instructions
- Combine the cream of chicken soup, sour cream and the juice from the pineapple in a mixng pitcher, then set aside.
- Place the chicken into a large mixing bowl. Stir in the liquid mix and cover the chicken well.
- Stir in the cooked rice and mix well with the chicken. Stir in the almond's, celery, black olives and pineapple. Salt and Pepper to taste. Last fold in the Chow Mein Noodles. Mix well.
- Spoon the chicken mixture into a 9X13 baking dish.
- Bake in a 350 degree oven for 40 minutes or until the casserole is heated through.
This delicious casserole is ready to serve.
