Stuffed Italian Spaghetti Squash
We grew the Spaghetti Squash in our garden and harvested it in the fall. I just wanted to do something special with it so I made the Stuffed Italian Spaghetti Squash and I am so glad I did, it is delicious. I used a micro wave short cut to cook the squash which cuts down on the cooking time. The flavorful stuffing is so versatile I plan on using it with pasta. This makes a beautiful presentation and will be a winner for any occasion.

How To Make Stuffed Italian Spaghetti Squash
Prepare The Spaghetti Squash
The Italian Stuffing
Brown the Italian Sausage, then add the Italian seasons.
Chop the 1 Gala Apple and 1 Green Apple in a fine chop.Add the chopped apples to the browned sausage.
with the sausage mixture.
Fill each half of the spaghetti squash with the
sausage and apple mixture.
Place into a 9 X 13 baking dish. Top with shredded cheese.
Bake in the oven for 15 to 20 minutes,
until the cheese begins to melt.
Remove from the oven and cool on
a cooling rack until ready to serve.

Stuffed Italian Spaghetti Squash
A garden to table recipe that is so fresh and full of flavor. This is great for any occasion.
Ingredients
- 1 Microwaved Spaghetti Squash
- 1 pound Italian Sausage, browned
- 1/2 teaspoon Italian seasoning
- 1 teaspoon fresh thyme leaves
- 12 ounces fresh spinach
- 1 Gala Apple, chopped fine
- ! Green Apple, chopped fine
- 4 ounces Pepper Jack Cheese
- 4 ounces sharp Cheddar Cheese
- Fresh Thyme for garnish
Instructions
- Prepare the microwave spaghetti squash according to the recipe directions.
- In a large skillet brown the Italian Sausage, adding the Italian seasons and fresh thyme.
- Add the fresh spinach to the sausage and stir until just wilted.
- Add the chopped apples to the sausage mixture and continue to cook until the apples are just tender.
- Fill the spaghetti halves with the sausage filling. Sprinkle the cheese on top of the sausage filling.
- Place in a 9 X 13 baking dish and bake at 400 degrees for 10 to 12 minutes until the cheese melts. Remove from the oven to a cooling rack and garnish with fresh thyme.
