Slow Cooker Chicken Fajitas
Slow Cooker Chicken Fajitas recipe is simple and delicious, full of Tex-Mex flavor. This is a perfect busy day recipe when you need something special in the evening. These Fajitas are tasty and tender enough to take to a great covered dish dinner. Just add a little lime wedge, some cilantro and cheese, and you have a fantastic Chicken Fajita!

How To Make Slow Cooker Chicken Fajitas
We start the recipe with a layer of diced tomatoes and green chilies.
Top that with red and green bell peppers.
then placed them on top of the sliced onions.
Remove the chicken from the slow cooker and
Pour the remainder of the diced tomatoes and chilies
on top of the chicken.
Add the remainder of the green and red bell peppers
and sprinkle with chopped garlic.
Top with the remainder of the sliced onions.
Place the lid on the cooker and cook on high for 3 hours or low for 5 hours until the chicken is cooked through.
The vegetable will be cooked until tender, they wont be over cooked.
Remove the chicken from the slow cooker and
place it on a sheet pan.
Shred the chicken breast into thin strips.
Return the chicken to the slow cooker. Pour a lime and honey mix over the chicken and toss well.
Recipe
Serve on a warmed flour tortilla with optional toppings.

That sounds yummy! We just had chicken fajitas last night and now I'm king of wishing I had thought to cook them in the slow cooker. That is a genius idea with such easy clean up.
