Lemon Surprise Cake is a very easy recipe to make. This is a lemon lovers dream dessert. The cake has a great lemon surprise on the inside and is topped with a creamy marshmallow topping. This is one of those recipes that can be served for a special occasion or a weeknight family meal.

Pour the prepared batter into a 9X13 baking dish.

Drop tablespoons of the pie filling
on top of the cake batter. With a thin skewer, swirl 
the pie filling into the batter.

Bake in a 350 degree oven for about 40 minutes.

Lemon Surprise Cake

Lemon Surprise Cake

A delicious lemon cake with a center surprise. Topped with a marshmallow topping. A great dessert for any occasion.

Ingredients

The Cake
  • 1 (15.25 ounce) box Lemon cake mix
  • Ingredients for the cake, eggs, oil, water according to the package directions.
  • 2 cups Lemon Pie Filling
  • Baking oil and flour spray

Instructions

The Marshmallow Frosting
  1. (8 ounce) tub whipped topping
  2. 1 (7 ounce) jar marshmallow topping
  3. Zest of 1 fresh lemon
Cake
  1. In a large mixing bowl with an electric mixer, mix the cake batter according to the package directions.
  2. Spray the 9 X 13 baking dish with a baking oil and flour spray. Pour the batter into the baking dish.
  3. Using a tablespoon, spoon the pie filling over the top of the batter. Using a sharp skewer, swirl it all around the top of the batter.
  4. Place the baking dish into a 350 degree oven and bake for about 40 to 45 minutes until the center is set.
  5. Remove the cake from the oven and cool it on a cooling rack before frosting.
  6. After the caked is frosted then refrigerate for at least 2 hours before serving.
  7. Refrigerate after serving.
The Marshmallow Frosting
  1. In a medium mixing bowling whisk the whipped topping and the marshmallow topping together
  2. Mix until the frosting is completely smooth. Spread the frosting on a cooled cake.
  3. Garnish with Fresh Lemon Zest
