Potluck Pasta Salad
Our Potluck Pasta Salad is a perfect salad for any potluck gathering. This salad is easy to put together and has fresh garden vegetables which makes it a very healthy salad to take. We live in a country lake community, our lake shore line touches several small communities. We interact with several of those communities and participate in great potluck gatherings during the course of a month. This has been one of my favorite salad's to take. I rarely ever bring any back home with me.

How To Make Potluck Pasta Salad
We will start our salad with cooked and drained large elbow macaroni.
Next we will add chopped red onion, fresh cherry tomatoes, sliced in half and cheese cubes, cheddar or Velveeta cubes.
In a mixing jar, we will mix olive oil, lemon juice, red wine vinegar, honey, salt, pepper, basil, oregano, parsley and thyme. Shake in the mixing jar until creamy, then pour it over the pasta and vegetables.
Add fresh sliced cherry tomatoes and the delicious dressing.
Toss well and it is ready for the lid on the serving bowl.

This is a great Pot Luck bowl. It also has a ice pack holder on the bottom, perfect for keeping the salad cool for serving.
It is really a lot of fun to stand back and watch a potluck table fill up with amazing food. This table already has a cold slaw, and a oriental salad, then a large pan of smoked ham.
Now we have a large pan of smoked brisket, a slow cooker full of bar-b-que sausage, fried chicken, some casseroles and this does not even include the dessert table.
Let's fill our plate!
The line is half way down and the salad is almost all gone.
It is that good!

ReplyDeleteI made this for a large picnic gathering and was happy with the amount it makes. The spices were nice, giving the pasta salad a good flavor overall. I used regular sized elbow macaroni as it was what I had on hand.
