Baked Berry Oatmeal
Our Baked Berry Oatmeal has become one of the favorite breakfast and brunch recipes in this past year. This is so easy to put together, comforting and absolutely delicious. Our little Grands just love this recipe and would be a great dish to prepare for school days. We have found that it freezes well which is a big plus!

How To Make Baked Berry Oatmeal
We start our recipe with a mix of blueberries and strawberries, washed and cleaned.
In a large mixing bowl, stir together rolled oats, and all the seasons.
In a large mixing pitcher, whisk together the liquid.
Pour the prepared mixture into a buttered 9 X 13 baking dish.
Bake in a 350 degree oven for 45 minutes, until set in the center

Let cool on a cooling rack for at least 20 minutes.
Garnish with fresh berries and mint.

Baked Berry Oatmeal
A delicious brunch or breakfast dish. Freezes well for family grab and go breakfast.
Ingredients
- 5 tablespoons butter, divided
- 4 cups rolled oats
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 4 cups whole milk
- 1/4 cup maple syrup
- 2 large eggs
- 2 teaspoons vanilla extract
- 1 & 1/2 cups strawberries, chopped
- 1 & 1/2 cups blueberries, chopped
Garnish
- 2 cups strawberries, large chop
- 2 cups blueberries
- 4 or 5 fresh mint
- 1 cup whipped cream
Instructions
- Melt 4 tablespoon of the butter and set aside.
- In a large mixing bowl, stir together the oats, baking powder, salt, and cinnamon.
- In mixing pitcher, whisk together the milk maple syrup, melted butter, eggs and vanilla.
- Add the liquid mix to the dry oatmeal mix and stir well to combine.
- Fold in the prepared berries. Butter the 9 X 13 baking dish with 1 tablespoon butter. Pour the mixture into the prepared baking dish.
- Bake at 350 degrees for 45 minutes or the center is set and the top is slightly browned. Cool on a cooling rack for at least 20 minutes. Garnish with the berries, mint and whipping cream if desired.
Notes
This recipe freezes very well as a whole dish or in individual servings.
