Taco Tuesday Casserole
We love our Tex-Mex here at the cottage. Our Taco Tuesday Casserole is a giant taco in one pan. Baked to perfection with cheese, onion and crisp tortilla chips. We topped this one with some fresh avocado chunks and then of course our home canned salsa. This casserole goes together real fast and is on the table for a hungry family.

How To Make Taco Tuesday Casserole
We will start this casserole with draining and rinsing the beans.

Taco Tuesday Casserole
A great taco casserole the whole family will enjoy. Easy to make and on the table in no time. A budget friendly family meal.
Ingredients
- 1 pound ground chuck
- 1 large onion, medium chop
- 3 garlic cloves, minced
- 1 medium green bell pepper, chopped
- 1 medium jalapeno, seeded and chopped
- 1 (15 ounce) can Ranch Beans drained and rinsed
- 2 (10 ounce) can's green chilies and diced tomatoes
- 2 teaspoons chili power
- 1/2 teaspoon ground cumin
- 1/2 teaspoon dried oregano
- salt and pepper to taste
- 4 cups yellow baked tortilla chips, slightly crushed
- 3 cups sharp cheddar cheese, shredded
- Garnish with 1 fresh avocado, chopped and 2 cups fresh green onions, chopped

Instructions
- In a large oven proof skillet such as a iron skillet, brown the ground chuck. Add the onions, garlic, bell peppers and jalapeno's. Cook this mixture until the vegetables are tender.
- Add the Ranch Beans, green chilies and diced tomatoes to the casserole mixture and mix well. Add the chili powder, cumin and oregano, then salt and pepper to taste, then mix well.
- In a large mixing bowl, add the tortilla chips and 1/2 of the cheese, then toss together.
- You can bake the casserole in the skillet or a baking dish. I like to put it in a 9 X 13 baking dish that has been sprayed with a baking oil.
- Spoon the casserole mixture into the baking dish and top with the tortilla chips and chips. Then top with the remainder of the cheese.
- Bake at 375 for about 20 minutes or until the cheese is melted.
- Garnish with the chopped avocado and chopped green onion, than add the Garden to Table Canned Salsa to taste.
