Ranch House Taco Soup
Ranch House Taco Soup is a delicious soup that our family loves. My sister-in law gave me this recipe years ago and it has been one of our favorites. The soup is very easy to put together and is thick and hearty. We like to serve it with some shredded sharp cheddar cheese, and taco chips. If you should have left overs, it freezes well for up to 3 months.

How To Make Ranch House Taco Soup
We will start the recipe with lightly browned ground chuck. Add the medium chopped onion. clear and tender.
Add all the spices and stir well.
Stir in the whole kernel corn, cream style corn, pinto beans, black beans and red kidney beans, diced tomatoes,
Rotel with green chilies and chicken broth.
Bring the soup mix to a boil, then reduce the heat to low or simmer.
30 to 40 minutes before serving.
For serving use your favorite toppings. Cheddar Cheese, Monterey Jack Cheese, Sour Cream, and fresh green onions.

Ingredients
- 1 pound ground chuck
- 1 large onion, medium chop
- 1 ( 14.75 ounce) can cream style corn
- 1 ( 15.25 ounce) can whole kernel corn, drained
- 1( 16 ounce) can pinto beans, drained
- 1 (16 ounce) can black beans, drained
- 1 ( 15 ounce) can dark red kidney beans, drained
- 1 (10 ounce) can Rotel Tomatoes, with green chilis
- 1 ( 14.5 ounce) diced tomatoes, with liquid
- 2 cups chicken broth
- 1 ( 1 ounce) packet Ranch Dressing mix
- 1 ( 1 ounce) packet Taco Seasoning Mix
- Salt & Pepper to taste
Garnish
- Cheddar Cheese, shredded
- Monterey Jack Cheese, shredded
- Sour Cream
- Fresh Green Onions
Instructions
- In a large soup pot, brown the ground chuck and add the onions, salt and pepper to taste. Cook the ground chuck and onions until the onions are clear and tender.
- Stir in the cream style corn, whole kernel corn, pinto beans, black beans, red kidney beans, Rotel, Diced Tomatoes, and chicken broth. Stir well.
- Add the ranch dressing mix and the taco seasoning then stir well.
- Bring the soup mix to a boil, reduce the temperature to low or simmer. Cook at the lower temperature for at least 30 to 40 minutes.
Garnish
- Add any or all of the garnish.
Notes
This soup freezes well for up to 3 months.
