Cheesy Broccoli Casserole
Our Cheesy Broccoli Casserole is a delicious side dish that even the kids love. The recipe is made with fresh broccoli, a creamy cheese sauce with just the right seasons. It bakes in the oven until we have a nicely topped casserole. This lovely casserole can be frozen for up to 3 months. This casserole is a big winner every time!

How To Make Cheesy Broccoli Casserole
We start with fresh broccoli, washed and cut into florets.
Remove the florets from the boiling water into a bowl with ice water.
Let the florets sit in the ice water for about 1 minute.
Remove the florets from the ice bath and
place them in a colander to drain.
We are going to make the cheese sauce. We will be adding lightly beaten eggs, flour, half and half, Cheese and fried onions.
In a sauce pan heat the butter until it is melted, then add the garlic and cook the garlic for about 2 minutes.
Whisk until the mixture begins to thicken.
Continuing to whisk add the salt and pepper.
Remove the pan from the heat and whisk in the cheese mixture. Whisk together until the cheese mixture is completely melted.
Add the broccoli, eggs and
one cup of the fried onions, stir until combined.
With a baking spray, spray a 9X13 baking dish.
Pour the casserole mixture into the baking dish.
Sprinkle the remainder of
the cheese and the onions on top of the casserole.
Bake in a 375 degree oven for 30 minutes or until set in the center.

Cheesy Broccoli Casserole
A delicious side dish that even the kids love. The recipe is made with fresh broccoli, a creamy cheese sauce, seasoned well and baked. A winner every time!
Ingredients
- 10 cups fresh broccoli florets
- 5 tablespoons butter
- 4 garlic cloves, minced
- 1/3 cup all-purpose flour
- 2 teaspoons salt divided
- 1 1/2 teaspoon black pepper
- 2 1/2 cups half and half
- 1 cup Monterey Jack Cheese, shredded
- 1 cup Sharp Cheddar Cheese, shredded
- 5 large eggs, beaten
- 1 1/2 cups crispy fried onions, divided
Instructions
- In a large stock pot fill with water and add 1 teaspoon salt. Bring the water to boil. Add the fresh florets to the boiling water and boil for 3 minutes. Remove the florets from the boiling water and place into a large bowl of ice water. Remove the florets after 1 minute and strain in a colander. Set the colander aside.
- Over medium melt the butter in a large sauce pan. Sauté the garlic for about 1 minute. Sprinkle in the flour whisking constantly, cook for about 1 to 2 minutes. Slowly add the half and half, then add the remainder of the salt and all the pepper. Place the heat on simmer and simmer for about 7 minutes until the mixture thickens, stirring often.
- In a medium bowl, mix the cheeses together. Remove the sauce pot from the heat. Stir in 1 1/2 cups of the cheese mix , stir constantly until the cheese is melted. Add the beaten eggs and 1 cup of the fried onions,and fresh broccoli stir until completely combined.
- Spray a 9X13 baking dish with a cooking spray. Pour the broccoli mixture into the baking dish. Sprinkle the remaining cheese and fried onions to the top of the casserole. Bake at 375 degrees for 30 minutes. Remove to a cooling rack and let set for 5 to 10 minutes before serving.
There is plenty for seconds!
