Green Bean and New Potato Salad
Our garden to table Green Bean and New Potato Salad is a great salad for all occasions. I have really enjoyed taking the salad to pot luck events, and family gatherings. The salad is perfect for spring and summer outdoor events, it has no dairy products in the recipe. The vinaigrette is just perfect for the combination of green beans and potatoes. This recipe is very flavorful and one that can be the favorite of the season.

This Is How To Make
Green Bean and New Potato Salad
We are starting with fresh green beans.
Trim the beans so they have even ends.
Place the prepared green beans into a stew pot
of salted boiling water. Reduce the heat to low
and cook until the green beans are just tender.
Fill a large bowl half full with ice water and set aside.
Very carefully lift the green beans out of the hot water in the stew pot. Do not pour the water out of the stew pot. Place the green beans into the ice water bath. Let them sit in the ice water bath for about 5 minutes. Transfer the green beans into a colander and set aside.

Boil the potatoes for about 12 minutes, until
you can pierce the potato with a toothpick.
Drain the water from the potatoes in a colander.
Run cold water over the potatoes
to stop the cooking process and set aside.
In a very large mixing bowl. Pour the olive oil, lemon juice, whole grain mustard, and dried thyme leaves into the bowl. Whisk the ingredients until completely mixed together.
Add the chopped red onion to the vinaigrette. Mix until completely incorporated.
Slice the new potatoes in half, leaving the jackets on.
Place the cooked green beans and cooked sliced new potatoes into the bowl with the vinaigrette.
Toss the green beans, and sliced new potatoes in the vinaigrette, making sure to cover all the vegetables well.Place in a serving dish with a lid. Refrigerate over night or at least 4 to 6 hours for best flavor. Let the salad come to room temperature before serving.
