Our Oven Baked Blueberry Skillet Pancake is a very special pancake. This recipe is easy to put together and is baked in the oven. We love our pancakes here at the cottage and this is a great way to serve them. The pancake is filled with delicious fresh blueberries and topped off with confectioners sugar  dusting. This has become of the most requested pancake for friends and family, especially for our Saturday morning brunch special's!

How To Make 
Oven Baked Blueberry Skillet Pancake
Oven Baked Blueberry Skillet Pancake at Miz Helen's Country Cottage
In a medium mixing pitcher, whisk together the flour, sugar, baking powder, and salt. Set aside.

In a separate mixing pitcher, whisk together the 
milk, egg and melted butter.

Pour the liquid ingredients into the dry ingredients then whisk until smooth.

Pour 2 tablespoons of the melted butter
 in the heated iron skillet.

Pour the pancake batter into the buttered skillet.

Sprinkle the blueberries on top of the batter.

Bake in a 375 degree oven for 25 minutes.

Let the pancake cool for about 5 minutes.

Dust the pancake with Confectioners sugar.

You can drizzle a little maple syrup on top.

      I have not tried any other container for the cakes, however I think you could use any heavy 10 inch baking dish, skillet or pan. Thanks so much for stopping by and happy cooking!
